Stir fried chicken with cashew nuts
An easy recipe for an Asian favourite
Ingredients:
- 2 – 3 cloves garlic, finely chopped
- ½ onion, sliced
- 1 mushroom
- 4 ears baby corn
- 100g cashew nuts
- 1 large dried chilli
- 1 spring onion, chopped into 1 inch pieces
- 50g chicken, chopped into bite sized pieces
- 2 tsbp cooking oil
- 1 tsp sugar
- 2 tsp fish sauce
- 3 tsp oyster sauce
Method:
- Heat the oil in the wok to high heat.
- Add the cashew nuts and dried chillies.
- Remove from the pan.
- Add the chicken and garlic and cook for approx 1 min until the chicken turns white.
- Add the remaining vegetables except the spring onion.
- Add the sugar, fish sauce and oyster sauce and cook for approx 1 min till the veg has softened.
- Turn off the heat, add cashew nuts and chilli.
- Add the spring onions and serve with steamed or sticky rice.
