Rich chocolate ice-cream

Makes just over ½ litre
Ingredients
- 2 egg yolks
- 50g caster sugar
- 250ml milk
- 150ml cream
- 100g plain chocolate
Method
- Pour the milk into a saucepan and slowly heat it to boiling point.
- In a bowl beat the egg yolks and the sugar together, and then pour the milk over whilst beating.
- Return the mixture to the saucepan and stir constantly over low heat, until the mixture forms a film over the back of a wooden spoon.
- Keeping the heat very low (you do not want it to boil), add the chopped chocolate and stir in until melted and the mixture is smooth. Take off heat and leave mixture to cool.
- When cold, add the cream, mix well and your ice-cream is now ready to churn.
