Barbecue sauce

Ingredients
- 6 large onions, finely sliced
- 250g butter
- 1½ tomato ketchup
- ¼ cup lemon juice
- ¼ cup vinegar
- 125g brown sugar
- 6 tsp prepared mustard (eg Dijon)
- 6 tbsp Worcestershire Sauce
- ½ tsp salt
Method
- Melt the butter in a large pan and add the sliced onions, separating the rings as you stir them into the melted butter.
- Cook until the onion rings are transparent.
- Simply add all the other ingredients, and simmer everything on a low heat until the sauce is emulsified and a dark rich brown in colour.
- Allow to cool slightly and serve warm.
