Spiced red lentil and tomato soup
Try this colorful vegetarian soup to brighten up your menu
Ingredients
- 1 large onion
- 2 cloves garlic
- 1 tsp garam masala
- 1 tsp cumin powder
- 1 tsp ground coriander
- 1 tsp tumeric
- 2 tins chopped tomatoes
- 400ml water
- 200g red lentils
- Salt and pepper to taste
- Small tin coconut milk (optional)
Method
- Fry the onion and garlic, add spices until fragrant.
- Add the tomatoes bring up to a boil and add water and lentils.
- Simmer for approx 30 mins or until lentils are tender.
- Season with salt and pepper.
- For a creamier version of this soup add a small tin of coconut milk at the end.
