Baked chicken thighs in orange
Ingredients
- 2 chicken thighs, cut into two
- 2 tbsp marmalade
- 2 tbsp English mustard
- 1 clove garlic
- 1 tbsp honey
- 1 orange, juice only
- 1 sprig rosemary
Method
- Place the marmalade, mustard, garlic, honey and orange juice into a saucepan and heat for 5 mins until the marmalade melts.
- Place the chicken thighs in an oven proof dish and season with salt and pepper.
- Remove the leaves from the rosemary and add to the chicken thighs.
- Pour the marinade over the chicken.
- Bake for 30 to 45 mins until the chicken is done.
- Baste the chicken in juices to form a glaze and serve with roast potatoes and vegetables.
