Barracuda with watermelon and refried beans
Ingredients
- 2 barracudas, filleted
- 1 lemon, juice only
- Olive oil
- Salt and pepper
- 3 tbsp refried beans
- 1 onion, roughly chopped
- 2 cloves garlic
- 1 large slice watermelon
- Handful parsley, roughly chopped
- Chilli oil
Method
- Marinate the barracuda in olive oil, lemon, salt and pepper for an hour.
- Place the refried beans into the food processor and add the onion and garlic.
- Add the watermelon and chopped parsley and process the mixture until almost smooth.
- Place the mixture in a serving dish and top with chilli oil.
- Fry the barracuda fillets for a few mins on each side until cooked through.
- Spoon a little bit of refried bean mixture on the plate and top with the barracuda fillets.
- Sprinkle with chopped parsley and serve with extra refried bean mixture at the table.
