Mozzarella di bufala, orange and caper salad
Salads can be as interesting as you make them. Say goodbye to boring old lettuce and tomatoes as Michael Diacono makes a great salad with oranges, mozzarella di bufala and crispy fried capers. No lettuce and tomatoes in sight!
Mozzarella di bufala, orange and caper salad
Serves 2
Ingredients
- 2 mozzarella di bufala
- 2 oranges, peeled and sliced
- 2 tbsp capers
- Few black olives
- Pepper and smoked salt
- 350ml red wine
- 2 tbsp sugar
- 1 star anise
- Olive oil
Method
- Prepare the dressing by boiling the wine with the sugar and star anise until it has thickened and set aside.
- Arrange the sliced oranges and mozzarella on a plate.
- Garnish with the black olives and season with the salt and pepper.
- Heat some olive oil and carefully add the capers. Be careful as they tend to splutter. Fry for 1 min till crisp then add to the salad.
- Drizzle with red wine reduction and serve.
