Kiddy-friendly caprese salad
Sean Gravina makes a simple salad that the kids will love. By removing the seeds from the tomato and going easy on seasoning and dressing this salad will keep in lunchboxes without going soggy.

Kiddy-friendly caprese salad
Ingredients
- Plum tomatoes
- Mozzarella
- Pine nuts
- Basil
- Salt and pepper
- Olive oil
Method
- Remove the seeds from the tomatoes and cut into wedges.
- Cut the mozzarella into bite sized pieces.
- Toast the pine nuts in a frying pan without any oil.
- Mix together the tomatoes and mozzarella and dress with a tiny amount of olive oil and salt and pepper.
- Top with pine nuts and torn basil.
