Olive oil apple cake
An impressively moist and delicious olive oil apple cake that is chock full of apples, raisins and a scent of cinnamon

Ingredients
- 384g flour
- 2 large apples
- orange juice to soak apples in
- 1/2 tsp cinnamon
- 1tbsp baking powder
- 1tbsp baking soda
- 170g sugar
- 2 large eggs
- 216g extra virgin oil
- Raisins to your liking
- Icing sugar for dusting

Method
- Chop the apples and place in a small bowl.
- Add the orange juice, just enough to coat them.
- In a bowl, sift together the flour, cinnamon, baking powder and baking soda and set aside.
- In a mixer, mix the sugar and virgin oil until well combined.
- Add the eggs and whisk.
- Add dry ingredients to the mixer and beat together.
- Drain apples and add to the mixer together with the raisins.
- Line a cake pan with baking paper and cook for 45min at 180c.
