Broccoli frittata
Baked frittatas are like overstuffed omelets that you don't have to worry about flipping... this one makes for a simple breakfast, brunch or dinner

Ingredients
- 1 shallot
- 1 head of broccoli
- 6 eggs
- 2tbsp olive oil

Method
- Cut the broccoli florets off the main stem and place in a microwave safe bowl.
- Place a sheet of microwave proof cling film, pierce with a knife to allow steam to Escape.
- Place in the microwave and let it cook for 2 to 3 minutes on full power until broccoli is soft but still has a bit of resistance.
- Cut the shallot in small pieces and place in a pan with a couple of tablespoons of olive oil.
- Lightly sauté' the onion.
- Whisk together 6 eggs and season with salt.
- Add the broccoli to the onions, season with salt and cook together for a few minutes.
- Add the eggs and make sure the whole pan.
- Place the pan in the oven and cook at 180 degrees for 15 to 20 minutes.
- Allow to cool, then serve.
