Thai-style stir-fried beef with peanuts
Serves 4
Ingredients
- 1 onion
- 2 cloves garlic
- ½ inch fresh ginger, grated
- 1 Thai chilli (more or less to taste)
- 1 lime, zest and juice
- 400g beef (fillet or any other cut)
- 1 bunch broccoli (or any other green vegetables)
- 1 tbsp soy sauce
- 2 tbsp fish sauce
- 3 tbsp oyster sauce
- 450g rice noodles
- 4 eggs
To serve
- Handful peanuts, crushed
- Handful fresh coriander, chopped
- 1 spring onion, chopped
- 1 red chilli, thinly sliced (optional)
- Lime wedges
Method
- Fry the onions and the garlic until soft.
- Add the grated ginger, chilli and lime zest. If the pan gets a little dry add some water (never more oil).
- Add the broccoli.
- Add the beef and fry for a few seconds, adding the soy sauce, fish sauce, oyster sauce and lime juice.
- Boil the noodles according to the instructions on the packet.
- Add the noodles to the beef mixture and mix well.
- Place in four separate bowls.
- In a separate pan, fry the four eggs and top each noodle dish with a fried egg.
- Top with crushed peanuts, coriander, spring onion and chilli.
- Serve immediately with wedges of lime.
