Pork ribs with potato wedges and garlic and chive sacue
Ingredients
- 2 racks pork spare ribs (cut in half)
- 1 tsp smoked paprika
- 1 tbsp rock salt
- 1 lamb cube (or chicken stock)
- Sesame seeds
Sauce
- 3 tbsp soy sauce
- 3 tbsp vinegar (wine or white)
- 3 tbsp ketchup
- 3 tbsp sugar
- 1 tbsp corn flour mixed with 2 tbsp of water
Potato wedges
- 3 large potatoes
- Sweet paprika
- Mixed Italian herbs
- Olive oil
- Salt and pepper
Zucchini and carrots
- Zucchini
- Carrots
- 2 tsp honey
- Olive oil
Garlic and chive sauce
- 2 cloves garlic, crushed
- 1 tub Greek yoghurt
- 1 tbsp mayo
- 1 lemon, juice only
- Lots of chives
Method
- In a large pot with water, simmer spare ribs with salt, smoked paprika and lamb cube or chicken stock for 45 mins.
- In the meantime prepare the sauce by mixing all the ingredients (except for the corn flour which is mixed with water in a small jug) and simmer in a small sized pot.
- When sugar dissolves pour in the corn flour and stir till sauce thickens.
- Transfer ribs in a flat baking dish and with a tablespoon, spread sauce over the top of each rack of ribs.
- Sprinkle some sesame seeds over the top and put in a preheated oven at 200°C for 30 minutes.
- To make the potato wedges, wash and cut potatoes into thin wedges. Put in a baking dish drizzle olive oil, sweet paprika, mixed Italian herbs, salt and pepper and toss. Bake in the oven for 45 mins to an hour.
- To make the zucchini and carrots, cut vegetables lengthways and drizzle with olive oil and honey. Put in oven for half hour.
- To make the garlic and chive sauce, mix all of the ingredients until combined.
