[WATCH] How to fillet a fish
Filleting a fish can seem like a daunting task. You can ask your fishmonger to do it for you but with a bit of practice you can be filleting your own fish like a pro, with the added bonus of keeping the bones and heads for fish stocks. Sean Gravina shows you how.
Filleting a fish
Ingredients
- 1 white fish (lampuka)
Method
- Using a serrated knife, cut the head off the fish, through the spine.
- Run the knife along the backbone of the fish and remove the fillet avoiding the bony bits, right through to the stomach.
- Place the fillet on the board, skin side down.
- Remove any bones that may remain as well as any dark bits of meat as they create a bitter taste.
- Turn the fish over and remove the other fillet.
