Cleaning calamari
You will need
- Calamari
- Butter knife
Method
- Pull the head just below the eyes upwards, removing the ink sac intact. Bursting the ink sac will result in a very black kitchen.
- Remove the beak from the head and cut the tentacles to the desired length.
- Peel the skin by pinching just below the wing and pulling back. The skin should pull away in one piece.
- Pull the ‘back bone’ and cut the body into rings or cut in half and score with a butter knife.
