Cleaning prawns

You will need

  • Prawns
  • Paring knife
  • Toothpick

Method

  1. Remove the head of the prawn.
  2. If serving tail-on prawns, grab the shell near the legs of the prawn and pull it outwards and around the prawn.
  3. If serving tail-off prawns, remove the head and squeeze off the tail, removing the shell until clean.
  4. Place the prawn on a board with its belly on the board side, bend the prawn from the joint to expose the black bag (intestine) and fork it out with the toothpick with out rapturing the bag.
