[WATCH] Smoke your own mozzarella
Smoked mozzarella has a particular flavour and though some supermarkets do stock the smoked variety it is easy enough to do it at home

Smoked mozzarella
You will need
- Fresh mozzarella di bufala
- Wood smoking chips
- Deep baking tray, with a lid
- Griddle
Method
- Place the griddle over the baking tray and add the woodchips to one side of the tray. These are available from supermarkets. Different woods will impart different flavours to the cheese.
- Turn on the heat and leave until the chips are starting to smoke.
- Place the mozzarella on the side of the baking tray that does not contain woodchips. (Placing a piece of greaseproof paper underneath the mozzarella will stop the cheese from sticking to the griddle).
- Put the lid on the pan and leave to smoke for approx 3 mins, until the mozzarella has taken on a smokey colour.
