Artichoke and mushroom fricassee
Ingredients
- Mixture of artichokes, fresh, brined, pickled etc
- 1 lemon
- ½ celery
- 1 onion
- ½ carrot
- 1 sprig thyme
- 2 cloves garlic, sliced
- ½ tsp fennel seeds
- ½ tsp coriander
- 1 bay leaf
- 250ml white wine
- 500g button mushrooms, finely chopped
- 1 clove garlic
- 1 shallot chopped
- Olive oil
- Parsley chopped
- Salt and pepper
- Fresh bread to serve
Method
- Choose a selection of your favourite artichokes.
- Dice the vegetables and sauté in oil.
- Once they softened add the seeds, thyme and bay leaf. Cook until fragrent
- In a separate pan cook the mushrooms in some oil together with a smashed garlic clove.
- Add the artichokes to the veg and sauté lightly, add the wine and let it cook out.
- Add some butter to the mushrooms until foamy (on a medium heat).
- Add the mushrooms to the artichokes once the alcohol of the wine has cooked through.
- Finish off with some lemon and parsley.
- Serve with warm bread.
