Homemade vegetable stock
Ingredients
- 2 tbsp olive oil
- 1 medium onion, sliced
- 1 medium carrot, sliced
- 4 celery sticks, sliced
- 1 large carrot, sliced
- 5 thyme sprigs
- 2 bay leaves
- Parsley
- 1.2l water
Method
- Pour the olive oil into a large pot and heat.
- Add the onions, celery and carrot and sauté on a medium heat for about 5 mins; you want to soften them but not add colour.
- When soft, add the thyme, bay leaves and parsley and cover with water.
- Bring to a boil and simmer for 30 mins.
