Spring time makes us happy; the longer days, the warmer temperatures, the colourful fruit and vegetables along with the promise of the summer months soon to come.

One of our favourite vegetables of the spring is asparagus. Not so long ago these were only possible to find in the imported section of the larger supermarkets and cost an arm and leg. Today you can find locally grown asparagus all over including the Farmers’ Market. Pippa Mattei makes some of her favourite recipes using this delicious vegetable. From simply steamed and smothered with hollandaise to risottos, pasta sauces and tarts, these versatile veggies make your dish as pretty to look at as they are delicious to eat.
