Cucumber Raita

Ingredients
- 1 small cucumber, peeled
- 350g Greek yoghurt
- 5 tbsp chopped mint
Method
- Cut the cucumber in half lengthways, scoop out the seeds and cut the flesh into small cubes.
- Place in a bowl with the yoghurt and mint and chill.
