Artichoke and Maltese sausage stew
Slow-cooked stews are what winters are made for. Michael Diacono’s artichoke and Maltese sausage recipe has all the benefits of a slow cooked stew that can be prepared in a fraction of the time.
Artichoke and Maltese sausage stew
Ingredients
- 1 onion
- 1 stick celery
- 1 small carrot
- 2 cloves garlic
- 3 Maltese sausages
- Black pepper
- 2 potatoes, peeled and chopped
- 1 tbsp kunserva
- 8 leaves sage
- 4 artichoke hearts
- 1 glass red wine
- 2 tomatoes
- 3 tbsp capers
- Handful parsley
Method
- Sauté the onion in olive oil with the celery, carrot and garlic.
- Roughly chop the Maltese sausage and add to the pan and season with freshly ground black pepper.
- Add the potato, the kunserva and sage.
- Add the artichoke hearts and the red wine.
- Roughly chop the tomatoes and add to the stew and add the capers.
- Cover and allow to simmer for 20 mins.
- Top with parsley and serve with Maltese bread.
