Asian chicken legs in Coca-cola
These chicken legs are slow cooked in soy sauce and sugary Coca-cola leaving them full of flavour and falling off the bone. The Preca sisters share this easy recipe.
Asian chicken legs in Coca-cola
Ingredients
- ½ cup soy sauce
- 200ml Coca-cola (you need the sugar so don’t use diet)
- 6 chicken legs, bone in
- 2 cloves garlic
- 1 leek, chopped
- 100ml chicken stock
- Basmati rice
- Spring onions, to garnish
Method
- Pre-heat the oven to 180°C.
- Heat some oil in a pan and gently fry the leeks on medium heat, making sure they do not brown.
- When the leeks are soft, add the garlic and cook for a few mins.
- Add the chicken legs and fry on both sides until golden brown.
- Add the soy sauce and the Coca-cola and allow to cook for a min or so.
- Add the chicken stock and place in the oven for approx. 1 hour until the liquid has reduced and the chicken is falling off the bone.
- Remove the chicken from the pan and place the pan back on the hob. Allow the sauce to reduce until it thickens.
- Serve the chicken over rice with some of the thick sauce and fresh spring onions.
