Sweet potato and pecan bake

Mashed potato makes a great side for any roast meal. Sweet potatoes are not only healthier but they add a sweet flavour the humble potato just cannot compete with.

This sweet potato and pecan bake is the perfect accompaniment to a roast turkey, or any other roast and can equally be served with plenty of veggies or a nut roast for vegetarians.

Ingredients

  • 1kg sweet potato, peeled and diced
  • 4 tbsp butter
  • 1 tsp nutmeg, freshly grated
  • ½ cup milk
  • 1 tbsp brown sugar
  • ¼ tsp vanilla
  • 1 tsp salt
  • Pepper

Topping

  • 1 cup flour
  • 4 tbsp butter, melted
  • ¼ cup sugar
  • ½ tsp salt
  • 1 cup pecans, chopped

Method

  1. Pre-heat the oven to 200°C.
  2. Bring a large saucepan of water to the boil, add a little salt and add the sweet potatoes.
  3. Simmer for 15 mins until soft.
  4. Drain and return to the pot.
  5. Add the butter and mash the potatoes.
  6. Add the milk, sugar, vanilla, salt and pepper.
  7. Mix well and place in a casserole dish.
  8. To make the topping, place all the ingredients in a mixing bowl and mix well.
  9. Place on top of the sweet potato mash and bake for 25 mins.
