Sweet potato and pecan bake
Mashed potato makes a great side for any roast meal. Sweet potatoes are not only healthier but they add a sweet flavour the humble potato just cannot compete with.
This sweet potato and pecan bake is the perfect accompaniment to a roast turkey, or any other roast and can equally be served with plenty of veggies or a nut roast for vegetarians.
Ingredients
- 1kg sweet potato, peeled and diced
- 4 tbsp butter
- 1 tsp nutmeg, freshly grated
- ½ cup milk
- 1 tbsp brown sugar
- ¼ tsp vanilla
- 1 tsp salt
- Pepper
Topping
- 1 cup flour
- 4 tbsp butter, melted
- ¼ cup sugar
- ½ tsp salt
- 1 cup pecans, chopped
Method
- Pre-heat the oven to 200°C.
- Bring a large saucepan of water to the boil, add a little salt and add the sweet potatoes.
- Simmer for 15 mins until soft.
- Drain and return to the pot.
- Add the butter and mash the potatoes.
- Add the milk, sugar, vanilla, salt and pepper.
- Mix well and place in a casserole dish.
- To make the topping, place all the ingredients in a mixing bowl and mix well.
- Place on top of the sweet potato mash and bake for 25 mins.
