Candy cane cookies
Nothing says Christmas quite like candy canes. Put these into your regular sugar cookie recipe for a little Christmassy twist.
Candy cane cookies
Ingredients
- ¾ cup sugar
- 113g butter
- 1 egg
- ½ tsp vanilla
- 3 drops peppermint extract
- 1 2/3 cups plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- ½ tsp salt
- ½ cup crushed candy canes
Method
- Cream the butter and the sugar until pale and fluffy.
- Add the egg, vanilla and peppermint extract and mix well.
- Add the flour, baking powder, bicarbonate of soda and salt and mix well.
- Stir in the crushed candy canes and place in the fridge for at least 30 mins.
- Pre-heat the oven to 180C.
- Roll the dough into balls the size of golf balls and flatten a little.
- Place on a baking sheet lined with baking paper at least 2 inches apart.
- Bake for 8 to 10 mins until golden. Be careful not to overbake as the peppermint candies melt completely and go straight through the cookie.
- Remove from the oven and allow to cool on the baking sheet for 10 mins and then transfer to a wire rack to cool completely.
