White chocolate and cranberry cookies
Cranberries get very little love outside the Christmas season. Make the most of it with these cookies paired with white chocolate – perfect to leave for Santa on Christmas Eve.
White chocolate and cranberry cookies
Ingredients
- 113g butter
- ½ cup light brown sugar
- ½ cup golden sugar
- 1 tsp vanilla extract
- 1 egg
- 1 ½ cups plain flour
- 1 ½ tsp bicarbonate of soda
- 1 cup dried cranberries
- 1 cup white chocolate chips
Method
- Cream the butter and the sugar until pale and fluffy.
- Add the vanilla extract and the egg and mix well.
- Add the flour, bicarbonate of soda and salt and mix well.
- Mix in the cranberries and white chocolate and put in the fridge for at least 30 mins.
- Roll the dough into balls the size of golf balls and flatten slightly and place on a baking sheet lined with baking paper at least 2 inches apart.
- Bake for 12 mins until golden around the edges.
- Allow to cool for 10 mins on the baking tray, then move to a wire rack to cool completely.
- Store in an air tight container for 2 weeks.
