Malted chocolate cookies with white chocolate and almonds
These cookies are great even without the white chocolate and sugar pearl garnish. The red and green give it a bit more of a festive twist.
Malted chocolate cookies with white chocolate and almonds
Ingredients
- 50g butter
- 200g dark chocolate
- 1 tin condensed milk
- 25g ground almonds
- 2 tbsp Ovaltine
- 200g self-raising flour
- 100g white chocolate
- 100g almond slivers
- 150g white chocolate
- Green and red sugar pearls
Method
- Melt the chocolate and the butter and mix until smooth and shiny.
- Add the condensed milk and mix well.
- Add the ground almonds and the Ovaltine and mix well.
- Leave to harden a little in the fridge for 30 mins until stiff but still pliable.
- Pre-heat the oven to 180C.
- Cut the white chocolate into chips and add to the dough along with the almond slivers.
- Roll into balls, flatten and place on a baking sheet lined with baking paper.
- Bake for 12 mins. The cookies will still seem soft but will continue to harden whilst they cool.
- Allow to cool for 10 mins on the baking tray, then transfer to a wire rack to cool completely.
- Melt the remaining white chocolate in a small bowl.
- Dip half of the cookie into the white chocolate and add sugar pearls. Allow the chocolate to set and store in an airtight container for up to two weeks.
